Potato-apple Latkes Recipe

Ingredients
  • 1 tbsp fresh lemon juice .
  • canola oil, for frying .
  • 2 tbsps all-purpose flour .
  • 1 granny smith apples (peeled, cored & coarsely shredded) .
  • sour cream, for serving .
  • 1 c water .
  • 1 lb granny smith apples .
  • 1 lb macintosh apples .
  • Vanilla Applesauce .
  • schmaltz, for frying (see Note) .
  • 1 tbsp kosher salt .
  • Latkes .
  • 1 medium onion, coarsely grated .
  • 1 vanilla bean, split lengthwise .
  • 1/8 tsp fresh ground white pepper .
  • 4 baking potatoes, peeled & coarsely shredded (2 1/2 lbs) .
  • 1 egg, lightly beaten

Directions
  • Step #1 In a large bowl, mix the egg with the flour, salt & white pepper.
  • Step #2 In a colander, toss the shredded potatoes with the onion & apple & squeeze dry.
  • Step #3 Add to the bowl & stir this to mix.
  • Step #4 Set aside for 10 mins.
  • Step #5 In a large skillet, heat 1/2 c of canola oil with 2 tbsps of the schmaltz until shimmering.
  • Step #6 Spoon heaping tbsps of the latke mixture into the oil about 2 inches apart & flatten slightly with a fork.
  • Step #7 Fry the latkes over moderately high heat until golden on the bottom, 2 to 3 mins.
  • Step #8 Lower the heat to moderate, turn the latkes & fry until golden & crisp, about 2 mins longer.
  • Step #9 Drain the latkes on paper towels set on a rack & transfer to a platter.
  • Step #10 Repeat with the remaining latke mixture, adding more oil & schmaltz to the skillet as needed.
  • Step #11 Serve hot with Vanilla Applesauce & sour cream.
  • Step #12 Vanilla Applesauce: Peel, core & quarter the apples.
  • Step #13 In a medium saucepan, mix the apples, water, vanilla & lemon juice & bring to a boil.
  • Step #14 Cover up & cook over moderately high heat, stirring every once in awhile, until the apples are tender, about 15 mins.
  • Step #15 Let cool, then remove the vanilla bean & whisk until a chunky sauce forms.
