Chunky Mushroom Barley Soup Recipe

Ingredients
  • 1 medium onion, sliced .
  • 2 tbsps flour .
  • 1 (8 oz) package white button mushrooms, sliced .
  • 2 tbsps vegetable oil .
  • 1/3 c barley .
  • 3 c chicken broth .
  • salt & black pepper .
  • 1 bay leaf

Directions
  • Step #1 Heat oil In a large-ish pot.
  • Step #2 Add mushrooms & onions & cook stirring for about 8 Minutes.
  • Step #3 Reduce heat to low.
  • Step #4 Stir in the flour.
  • Step #5 Add the broth in a steady stream, mixing continuously to mix with the flour.
  • Step #6 Add Barley, covered, Bay Leaf & let simmer on low, for 30-40 mins until the barley is cooked.
  • Step #7 Discard bayleaf & season to taste.
