Savory Black-eyed Peas With Bacon Recipe

Ingredients
  • 4 slices bacon, cut into 1-inch pieces .
  • 1 large onion, sliced (1 c) .
  • 1 garlic clove, finely sliced .
  • 1 1/2 tbsps sliced fresh savory (or 1 1/2 tsps dried savory) .
  • 1 large green bell pepper, cut into 1-inch pieces .
  • 3 medium carrots, thinly sliced (1 1/2 c) .
  • 2 medium celery ribs, sliced (1 c) .
  • 2 1/2 c chicken broth .
  • 1 c dried black-eyed peas, sorted & rinsed .
  • 1/2 c shredded monterey jack pepper cheese

Directions
  • Step #1 Cook bacon in 10-inch skillet over med-heat/flame, stirring every once in awhile, until crisp.
  • Step #2 Remove bacon with slotted spoon; drain on paper towels.
  • Step #3 Drain fat from skillet.
  • Step #4 Heat broth, onion, peas, celery, savory & garlic to boiling in same skillet.
  • Step #5 Boil uncovered 2 mins; reduce heat.
  • Step #6 Cover up & let simmer about 40 mins, stirring every once in awhile, until peas are almost tender (do not boil or peas will burst).
  • Step #7 Stir in carrots & bell pepper.
  • Step #8 Heat to simmering.
  • Step #9 Cover up & let simmer about 13 mins, stirring every once in awhile, until vegetables are tender; stir.
  • Step #10 Sprinkle top with cheese & bacon.
