Step #1 Unwrap & carefully unfold thawed phyllo dough; cover with plastic wrap or wax paper & a damp cloth to keep the dough from drying out.
Step #2 FOR THE FILLING -- Grind the walnuts coarsely, mix with sugar & orange blossom water until well mixed.
Step #3 Butter a 12 x 16 inch baking pan.
Step #4 Render the butter.
Step #5 FOR THE ASSEMBLY -- Layer one package of the phyllo sheets in the pan, buttering generously between each sheet with a pastry brush or cloth dipped in butter.
Step #6 Mix 2-3 tbsps of water with the walnut mixture & put over the top of the last sheet, making sure to keep the layer of walnuts level.
Step #7 Repeat the same procedure with the second package of dough, buttering generously between each sheet, & butter the top.
Step #8 Cut into diamonds, dipping the knife into hot water as you go for easier cutting.
Step #9 Pour over any remaining butter.
Step #10 Bake at 350 degrees for 45 mins to 1 hr (depending on your oven) or until bottom is done & top is golden brown.
Step #11 If top does not brown nicely, watching constantly, put the baklawa under the broiler for a few seconds, as it will burn very quickly.
Step #12 FOR THE SYRUP -- Mix sugar & water together & bring to a boil.
Step #13 Boil about 15-20 mins.
Step #14 Remove syrup from heat, add lemon juice & orange blossom water.
Step #15 Stir & let cool.
Step #16 SHORTCUT -- Butter pan & place one whole package of phyllo dough in pan, butter top, & add nut filling.
Step #17 Place second package of phyllo dough over nuts & butter the top.
Step #18 Cut into diamonds & pour all the rendered butter into the pan, making sure it settles into all the cuts & around edges.
Step #19 Bake as directed above.
