Chicken Satay Salad Sandwiches Recipe

Ingredients
  • 1/4 seedless cucumber, thinly sliced lengthwise then cut into sticks .
  • 1 lime, juice of .
  • 2 c shredded lettuce or iceberg lettuce or romaine lettuce hearts .
  • 2 tsps hot sauce .
  • 4 crusty rolls .
  • 2 tbsps vegetable oil .
  • grill seasoning (recommended ( Grill Mates Montreal Steak Spice uping by McCormick) .
  • 1/4 c apple juice .
  • 3 tbsps dark soy sauce (Tamari) .
  • 1 1/2 lbs thin cut chicken breasts (cutlets) .
  • 3 tbsps chunky peanut butter .
  • 1 c shredded carrots

Directions
  • Step #1 Heat a grill pan or large nonstick skillet to medium high to high heat.
  • Step #2 Coat chicken in oil & grill seasoning & cook 3 mins on each side in 2 batches.
  • Step #3 Pile up meat & shred it with a sharp knife.
  • Step #4 Place peanut butter in a medium, microwave safe bowl & soften in the microwave on high for 20 seconds.
  • Step #5 Whisk soy, apple juice, hot sauce & lime juice into peanut butter.
  • Step #6 Toss chicken with satay sauce.
  • Step #7 Combine shredded veggies.
  • Step #8 Place 1/4 of veggies on sandwich bottoms & top this with 1/4 satay chicken mixture.
  • Step #9 Set the bun tops in place & serve or wrap for travel.
