Rice Noodle Salad Recipe

Ingredients
  • 1 tbsp sugar .
  • 1/4 c dry roasted peanuts (unsalted) .
  • 1 carrot, shredded .
  • 1/4 c rice vinegar (unseasoned) .
  • 1/4 tsp salt .
  • 1 tbsp asian fish sauce .
  • 1 c mixed fresh herbs, torn (cilantro, mint, & or or basil) .
  • 2 scallions, sliced crosswise .
  • 4 oz thin rice noodles

Directions
  • Step #1 Soak noodles in hot water for 10 mins, drain.
  • Step #2 Cook noodles in a pot of boiling water for 1 min.
  • Step #3 Drain & rinse under cold water.
  • Step #4 Drain again.
  • Step #5 Whisk together vinegar, sugar, fish sauce & salt In a large-ish salad bowl until sugar is dissolved.
  • Step #6 Add noodles & remainder of ingredients (carrot - peanuts).
  • Step #7 Toss.
