Cheesy Buttermilk Corn Bake Recipe

Ingredients
  • 1 1/2 c crushed saltine crackers (Ritz crackers will do also) .
  • 1 (14 oz) can cream-style corn .
  • 2-3 tbsps grated parmesan cheese .
  • 1/3 c pimentos, sliced (or to taste) .
  • 3 c grated cheddar cheese .
  • 1/2 c buttermilk .
  • 1 (14 oz) can canned corn niblets, drained (can use 2 cans if desired) .
  • 2 eggs, beaten .
  • salt & pepper .
  • 1 c half-and-half cream or milk .
  • 1/4 c melted butter .
  • 1 small green bell pepper (cut into strips) .
  • garlic powder (optional)

Directions
  • Step #1 Set oven to 350 degrees.
  • Step #2 Butter an 11 x 7-inch or a 9 x 9-inch baking dish (or any size casserole dish large enough to hold the mixture).
  • Step #3 In a large bowl, salt, eggs, milk, melted butter, pimento, cracker crumbs, pepper, Parmesan cheese, mix corn niblets, buttermilk, garlic powder (if using) & 1-1/2 c grated cheddar cheese; mix well to mix.
  • Step #4 Transfer to prepared baking dish, sprinkle with green bell pepper strips over top & cover with foil wrap.
  • Step #5 Bake for about 40-45 mins, remove this from oven, & uncover.
  • Step #6 Top with about 1-1/2 c grated cheddar cheese, & return to oven (uncovered) to bake for another 15 mins.
