Chicken Enchilada Lasagna Bundles Recipe

Ingredients
  • 1 c shredded monterey jack pepper cheese .
  • 1 c sour cream .
  • 1 c shredded cheddar cheese .
  • 12 uncooked lasagna noodles .
  • 1 medium tomato, sliced .
  • 2 (10 oz) cans enchilada sauce .
  • 1/2 c sliced green onions .
  • 4 1/2 oz sliced green chilies .
  • 2 c sliced cooked chicken

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Grease 13x9 baking dish.
  • Step #3 Cook noodles as directed on package & drain.
  • Step #4 Mix enchilada sauce, chilies & tomato.
  • Step #5 Mix chicken, Monterey Jack cheese, onions & 1 c sour cream.
  • Step #6 Spread about 1/2 c sauce mixture into baking dish.
  • Step #7 Spread about 1 tsp sauce mixture over each noodle; spread evenly with about 1/4 c of chicken mixture.
  • Step #8 Roll up each noodle; place seam side down on sauce in dish.
  • Step #9 Spoon about 1 c sauce over bundles.
  • Step #10 Sprinkle top with the Cheddar cheese.
  • Step #11 Cover up & bake 40 to 45 mins or until hot in center.
  • Step #12 Heat remaining sauce in saucepan; spoon over bundles.
  • Step #13 Serve with extra sour cream.
