Microwave Macaroni Cheese Recipe

Ingredients
  • 50 ml skim milk .
  • 1 liter skim milk .
  • 1 tbsp all-purpose flour .
  • 2 c edam cheese (grated) .
  • salt & pepper .
  • 1 liter water (to cook pasta) .
  • 1 tsp chicken stock (powdered) .
  • 300F g macaroni

Directions
  • Step #1 Place first portion of milk in a 2L capacity microwave bowl & heat on high power until boiling (approx 14 mins, but watch very carefully toward the end, or it will boil over VERY quickly!).
  • Step #2 Bring water to boil In a large-ish saucepan.
  • Step #3 Add macaroni once boiling, & cook til al dente.
  • Step #4 Drain.
  • Step #5 Add 2nd portion of milk, flour, chicken stock & seasoning to a shaker & shake til mixed.
  • Step #6 Add to boiled milk in jug & microwave again on high until boiling again.
  • Step #7 Add most of the grated cheese to the milk mixture (which should now be thickened) & pour over pasta in oven proof serving dish.
  • Step #8 Sprinkle top leftover grated cheese on top & microwave until melted.
  • Step #9 Serve with a salad, or you can add frozen peas/carrots/etc to the pasta while cooking if wanted.
