Goat Cheese And Sundried Tomato Crostini Recipe

Ingredients
  • 4 sun-dried tomatoes packed in oil .
  • 2 tbsps oil, from the tomatoes (or extra virgin olive oil) .
  • 4 tbsps extra virgin olive oil .
  • 1 bunch basil leaves .
  • 8 oz goat cheese .
  • 1 loaf French baguettes .
  • Crostini

Directions
  • Step #1 Slice the baguette into 1/4 thick slices.
  • Step #2 Brush the slices lightly with the olive oil.
  • Step #3 Place on a baking sheet & toast in a 425F oven until browned.
  • Step #4 Cool completely.
  • Step #5 Combine the sundried tomatoes, oil & goat cheese in a food processor/blender & puree until very smooth.
  • Step #6 There should not be any lumps.
  • Step #7 On each crostini place a small basil leaf, or half a larger leaf.
  • Step #8 Spread the goat cheese mixture on the crostini, covering half way up the basil leaf.
  • Step #9 Arrange on a platter & garnish platter with extra basil.
