Scandinavian Raspberry Ribbons Recipe

Ingredients
  • 1/2 c confectioners' sugar .
  • 2 tsps fresh lemon juice .
  • 1 large egg yolk .
  • 1/2 c raspberry jam .
  • 1 tsp cream or milk or water .
  • Icing .
  • 1/2 c confectioners' sugar .
  • 2 1/2 c all-purpose flour .
  • For Dough .
  • 1 tsp vanilla extract .
  • 1 c unsalted butter, at about room temp

Directions
  • Step #1 Preheat the oven to 375 degrees F.
  • Step #2 Cover up cookie sheet with parchment or baking paper.
  • Step #3 Make the dough.
  • Step #4 In a large bowl, cream the butter & sugar together with an electric mixer.
  • Step #5 Add the egg yolk & vanilla & beat until light.
  • Step #6 Add the flour, a little at a time, & mix until the dough is smooth.
  • Step #7 Divide the dough into 4 parts.
  • Step #8 On the countertop, use your palms to roll each part into a strand about 3/4 inch thick & the length of the cookie sheet.
  • Step #9 Place the strands about 2 inches apart on the paper-covered cookie sheet.
  • Step #10 With the side of your little finger, press a groove down the center of the length of each strand.
  • Step #11 Bake for 10 mins until the cookies feel firm to the touch.
  • Step #12 Remove from the oven & spoon or pipe jam into the grooves.
  • Step #13 Return to the oven for 5 to 10 mins or until cookies are very pale golden brown.
  • Step #14 To Decorate with icing:.
  • Step #15 Mix the confectioners' sugar, lemon juice & cream in a small bowl to make a smooth icing.
  • Step #16 Drizzle the icing down the length of the hot cookies.
  • Step #17 While the cookies are still warm, cut them at a 45 degree angle into 1-inch lengths.
  • Step #18 Let cool on the baking sheets.
  • Step #19 When the frosting is set, transfer to an airtight tin.
  • Step #20 Store in a cool place or freeze.
