Chipotle Chicken Tortilla Soup - Fast & Less Than 300 Cals Recipe

Ingredients
  • 1/4 c fresh cilantro, sliced .
  • 1 tbsp canola oil .
  • 3/4 lb chicken breasts, bite size pieces .
  • 1 c baked corn tortilla chips, crushed .
  • 1/4 tsp salt .
  • 1 c water .
  • 1 (14 oz) can fat free chicken broth .
  • 2 tsps dried chipotle powder .
  • 1 (14 1/2 oz) can stewed tomatoes .
  • 1 lime, 4 wedges .
  • 1 1/2 tsps garlic, minced

Directions
  • Step #1 In an large saucepan with the canola oil, saute the garlic & chicken for 2 mins, add chili powder & stir well.
  • Step #2 Stir in water, salt & tomatoes, broth, bring to a boil, then reduce heat to simmer.
  • Step #3 Simmer covered for 5 mins.
  • Step #4 Top with tortilla chips, cilantro & lime.
  • Step #5 Serving size is 1 1/4 c of soup.
