Christmas Fruitcake Cookies Recipe

Ingredients
  • 1/2 lb candied cherries, finely sliced .
  • 1 tsp ground nutmeg .
  • 3 c all-purpose flour, divided .
  • 1 quart shelled pecans, finely sliced .
  • 1 tsp ground cinnamon .
  • 1 tsp baking soda, dissolved in a little water .
  • 1 c butter or margarine, softened .
  • 1/2 lb candied pineapple, finely sliced .
  • 3 eggs, seperated .
  • 1 tsp vanilla extract .
  • 1 1/2 c granulated sugar .
  • 1/2 lb white raisins .
  • 1/2 tsp salt

Directions
  • Step #1 Cream butter, add sugar, then beaten egg yolks.
  • Step #2 Sprinkle top some of the flour over the fruit & pecans.
  • Step #3 Add spices & salt to remaining flour.
  • Step #4 Combine butter, fruit & flour mixtures.
  • Step #5 Add vanilla extract & baking soda.
  • Step #6 Beat egg whites until stiff & fold inches Drop scant tspsful on greased cookie sheet & bake this at 350 F for 10 - 15 mins.
  • Step #7 Batter may be prepared several weeks ahead.
  • Step #8 Freezes well before & after baking.
