Step #1 Cut the tops off the beets & boil whole beets until tender -- about 15-20 mins.
Step #2 Drain & cut into quarters.
Step #3 Section the mandarin oranges into small pieces or if using canned, then drain the liquid from the oranges.
Step #4 Put the quarter beets & mandarin oranges into a medium sized bowl.
Step #5 Mix the dressing & pour over it.
Step #6 Mix thoroughly.
Step #7 Best to let this sit for 1/2 to allow the flavours to mix before serving.
