Southwest Chicken Recipe

Ingredients
  • 1 tsp ground cumin .
  • 2 tsps salt .
  • 1/2 tsp onion powder .
  • 1/4 tsp cayenne pepper .
  • 1 (3 lb) chickens, cut into 8 pieces .
  • 1/4 c packed light brown sugar .
  • 1 tsp dried thyme .
  • 1 tbsp sliced fresh parsley .
  • lime wedges (optional) .
  • 1 1/2 tsps chili powder .
  • 1 tsp garlic powder

Directions
  • Step #1 Preheat oven to 375 degrees F.
  • Step #2 Or prepare grill for direct-and indirect-heat cooking.
  • Step #3 Combine first 8 ingredients;reserve.
  • Step #4 Line roasting pan with foil wrap.
  • Step #5 Rub sugar mixture over all sides of chicken;place this in pan.
  • Step #6 Coat chicken with cooking spray.
  • Step #7 Roast chicken in oven until no longer pink near bone, about 45-60 mins.
  • Step #8 Or place chicken meaty side down over direct heat;cook this until just browned, 4-5 mins.
  • Step #9 Turn;place over indirect heat.
  • Step #10 Cover up;cook this until chicken is no longer pink near bone, 40-50 mins.
  • Step #11 Transfer to serving platter;sprinkle with parsley.
  • Step #12 If desired, serve this with lime wedges.
