Sunny Day Casserole (cheesy Ham & Vegetables) Recipe

Ingredients
  • sea salt, to taste .
  • 1 c cracker crumbs .
  • 8 oz frozen cauliflower .
  • 1 (8 oz) jar pasteurized cheese spread, melted .
  • 4 c potatoes, sliced (2-4 potatoes) .
  • 2/3 c 2% low-fat milk .
  • 10 oz ham, sliced (2 c) .
  • 1 c low-fat cheddar cheese or swiss cheese or monterey jack cheese, shredded .
  • 16 oz frozen mixed vegetables, thawed (pre-mixed or what you have on hand, I like a mix of corn, spinach, & artichoke hearts) .
  • 1/4 c onions, sliced .
  • pepper, to taste

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Boil potatoes for about 10 mins; drain.
  • Step #3 In a large bowl, mix cheese spread & milk.
  • Step #4 Stir in potatoes, vegetables, ham, & onion; season this with salt & pepper.
  • Step #5 Pour into 13x9-inch casserole dish.
  • Step #6 Bake, covered, for 45 mins, stirring every once in awhile.
  • Step #7 Sprinkle top shredded cheese & cracker crumbs on top.
  • Step #8 Bake, uncovered, until cheese is melted.
