Basil Jelly Recipe

Ingredients
  • 2 c firmly packed fresh basil leaves, finely sliced .
  • 1 (1 3/4 oz) package powdered fruit pectin .
  • 1 quart water .
  • 5 c sugar .
  • 3 drops green food coloring (I used a touch of green paste coloring)

Directions
  • Step #1 In a large saucepan, bring water & basil to a boil.
  • Step #2 Remove from heat; cover & let this stand 10 mins.
  • Step #3 Strain & discard basil.
  • Step #4 Return 3 2/3 c liquid to the pan.
  • Step #5 Stir in pectin & food coloring.
  • Step #6 Return to a rolling boil over high heat.
  • Step #7 Stir in sugar.
  • Step #8 Boil for 1 min, stirring constantly.
  • Step #9 Remove from heat; skim off foam.
  • Step #10 Pour hot liquid into hot sterilized jars, leaving 1/4 inch headspace.
  • Step #11 Adjust caps.
  • Step #12 Process for 15 mins in a boiling water bath.
