Chilled Rice Salad Recipe

Ingredients
  • 3 c cooked rice, cooled .
  • 1/4 c French dressing (or to taste, I use Kraft) .
  • salt & pepper .
  • 1 small green bell pepper, sliced .
  • 2-3 stalks celery, finely sliced .
  • 1/4 c radishes, finely sliced .
  • 1/4 c sweet pickle relish .
  • 1 small onion, sliced .
  • 1/2 c mayonnaise (can use more if desired) .
  • 1 (2 oz) jar pimientos, drained & sliced (can use 2 jars) .
  • 3-4 hard-boiled eggs, sliced

Directions
  • Step #1 In a large bowl, mix the first 7 ingredients; mix to mix.
  • Step #2 In a small bowl, relish, mix the mayo, salad dressing, salt & pepper; add to the rice mixture; stir this to mix well.
  • Step #3 Chill in the fridge for 3 or more hrs before serving.
