Slow Cooked Portugese Lamb Recipe

Ingredients
  • 400F g peeled canned tomatoes .
  • 400F g canned chick-peas .
  • 1 tbsp sliced fresh thyme .
  • 2 onions, sliced .
  • 10 spring onions, trimmed .
  • salt & pepper .
  • 1 tbsp sliced fresh rosemary .
  • 1/2 liter red wine .
  • 10 garlic cloves, peeled .
  • 1 leg of lamb .
  • 400F g canned butter beans .
  • 1 liter tomato juice

Directions
  • Step #1 Preheat the oven to 150°C Trim all the fat off the leg of lamb.
  • Step #2 Put the lamb into a casserole dish with the red wine, rosemary, peeled tomatoes, onions, spring onions, garlic, tomato juice, thyme, salt & pepper.
  • Step #3 Cover up & heat in oven for 4 hrs.
  • Step #4 After 4 hrs add the chick peas & butter beans.
  • Step #5 Increase the heat to 200°C & cook uncovered for another hr.
