Creamy Succotash Recipe

Ingredients
  • 1 c cherry tomatoes, each cut in half .
  • 1 large green pepper, cored, seeded & sliced .
  • 2 tbsps unsalted butter .
  • 4 c fresh corn kernels .
  • 3/4 tsp salt .
  • 1/2 c flat leaf parsley, sliced .
  • 10 oz frozen lima beans .
  • 1/2 c heavy cream .
  • 4 slices bacon, cut into 1/4-inch slices .
  • 1/2 tsp black pepper .
  • 1/2 c chicken broth .
  • 1 medium red onion, sliced

Directions
  • Step #1 Cook lima beans according to package directions.
  • Step #2 Drain & set aside.
  • Step #3 In large nonstick skillet, add butter & bacon.
  • Step #4 Cook over medium-high heat until bacon starts to brown, about 3 mins.
  • Step #5 Stir in onion & green pepper & cook 10 more mins, stirring every once in awhile.
  • Step #6 Add corn, uncovered, salt, broth, pepper & cooked lima beans; simmer, 5 mins, stirring every once in awhile.
  • Step #7 Stir in cream, tomatoes & parsley & heat through.
