1/2 c granny smith apples, peeled, cored & sliced .
1 (6 oz) box stove top pork stuffing mix .
1/2 c dried cranberries .
4 thick cut pork chops or butterfly pork chops .
4 tbsps butter
Directions
Step #1 Preheat oven to 350 degrees.
Step #2 If pork chops are not butterflied, slice through leaving attached at one side so it opens like a book.
Step #3 Spice up inside & out with salt & pepper to taste.
Step #4 Heat a skillet on medium high heat with 2 T oil.
Step #5 Place pork cut side down in the pan.
Step #6 Leave for 4-5 mins.
Step #7 Turn & fold the chop shut & brown each outer side of the meat.
Step #8 If the edges are very thick you can also brown the edges.
Step #9 The meat should not be cooked all the way through, only nicely seared & browned.
Step #10 Remove pan from the heat & cover to keep warm.
Step #11 To start the stuffing, add the apple liquid, onions, chicken broth, apples, cranberries & the butter to a saucepan & following directions bring to a boil.
Step #12 Once liquid is boiling stir in the the bread & seasoning.
Step #13 Fold in well making sure all bread gets moistened.
Step #14 Cover up.
Step #15 Remove from heat & let this stand 5-10 mins.
Step #16 Fluff with a fork.
Step #17 Arrange meat with the "hinged" side down in a 9x9 baking dish or cake pan sprayed with a nonstick spray.
Step #18 Fill the upward facing pockets of the pork with the stuffing.
Step #19 If you have any stuffing left, spoon around the base of the meat.
Step #20 Cover up with foil wrap & bake for 20-30 mins or the meat is cooked to your satisfaction.
Step #21 I still have a thing about pork & I tend to overcook it to this day.
