Ingredients
  • 8 tbsps caster sugar .
  • 8 tbsps desiccated coconut .
  • 2 c corn flakes .
  • 2 c peanuts .
  • 8 tbsps butter, melted .
  • 4 c flour .
  • 1 c self raising flour .
  • 6 c rolled oats .
  • icing .
  • 8 tbsps raspberry jam .
  • 4 eggs .
  • 1/2 c butter .
  • 8 eggs .
  • 4 c coconut .
  • 3 c brown sugar

Directions
  • Step #1 Cream butter & sugar until light & creamy & add the egg, beating well to mix.
  • Step #2 Add the flours & stir until the flours have been incorporated.
  • Step #3 Press this filling into a 7 inches.
  • Step #4 greased square tin & prick all over with a fork.
  • Step #5 Bake at 400f.
  • Step #6 for 10 mins.
  • Step #7 Remove the cake tin from the oven & spread the jam over the pastry.
  • Step #8 In a bowl, mix the sugar, butter & egg yolks together until thick.
  • Step #9 Beat the egg whites separately until firm peaks form & fold into the thick batter.
  • Step #10 Add the coconut, rolled oats, peanuts & corn flakes & stir carefully.
  • Step #11 Spoon the topping over the pastry base & spread to smooth the topping.
  • Step #12 Reduce the heat of the oven to 375.
  • Step #13 & return the pan to the oven for 30 mins more.
  • Step #14 Allow to cool slightly then cut into fingers.
  • Step #15 When thoroughly cold, remove this from the tin.
