Whole Roasted Shallots And Potatoes With Rosemary Recipe

Ingredients
  • 11 oz shallots, peeled .
  • 2 tbsps balsamic vinegar .
  • fresh ground black pepper, to taste .
  • 4 sprigs rosemary .
  • 1 1/2 lbs baby potatoes, washed & cut in half .
  • 3 tbsps extra virgin olive oil .
  • salt, to taste

Directions
  • Step #1 Preheat oven to 180°C/350°F/Gas 4.
  • Step #2 In a large baking tray mix the olive oil & balsamic vinegar (you can leave the balsamic vinegar out if you don't have any or don't like it), add the whole twigs of rosemary.
  • Step #3 Add the shallots & potatoes, stir so everything gets coated well.
  • Step #4 Spice up to taste with salt & pepper.
  • Step #5 Roast, uncovered, for approximately 1 hr or until the potatoes are tender.
  • Step #6 Depending on the size of the vegetables & your oven, they might take a little less or longer, according to some reviews it might be worth checking after about 45 mins.
  • Step #7 Stir once or twice while roasting.
