Green Eggs And Ham Recipe

Ingredients
  • basil leaves (to garnish) .
  • fresh ground pepper .
  • 1/4 tsp salt .
  • fresh ground pepper .
  • 2 c firmly packed fresh basil leaves .
  • 2 garlic cloves, coarsely sliced .
  • 3/4 c cubed cooked ham .
  • 1 tbsp butter or margarine .
  • 3-4 tbsps olive oil .
  • 1/4 c grated parmesan cheese .
  • 8 large eggs .
  • Basil Pesto .
  • 2 sprigs fresh parsley .
  • 1/4 c pine nuts or walnuts .
  • 1/4 tsp salt

Directions
  • Step #1 To make the Basil Pesto: Add the first 7 pesto ingredients to the container of a food processor/blender or mixer.
  • Step #2 Process until minced.
  • Step #3 With motor running, slowly pour oil in through the feed tube & mix until a paste forms.
  • Step #4 Transfer mixture to a bowl; cover & put in the fridge until ready to use (or may freeze in an airtight container for up to 3 months; bring to room temp before using).
  • Step #5 To make Green Eggs & Ham: In a medium mixing bowl, whsik the eggs until slightly frothy; add in 2 tbsps Basil Pesto, salt, ham, & pepper; stir this to mix.
  • Step #6 Melt butter In a large-ish nonstick skillet over med-heat/flame; swirl butter to coat bottom of pan.
  • Step #7 When butter foams, add egg mixture all at once.
  • Step #8 Let set for 20 seconds.
  • Step #9 Cook, stirring, for about 3-4 mins or until fluffy & almost dry.
  • Step #10 Serve with basil leaves as garnish.
