Kusherie (egyptian Rice And Lentils) Recipe

Ingredients
  • Rice & Lentils .
  • 1 tsp salt .
  • 1 c boiling water (or stock) .
  • 4 garlic cloves, minced .
  • Browned Onions .
  • 1 green pepper, sliced .
  • 2 tbsps oil .
  • 2 tbsps oil .
  • 3 onions, sliced .
  • 1 1/2 c rice .
  • 1/2 tsp salt .
  • 1/2 c celery leaves, sliced .
  • 1/4 tsp cayenne pepper (or crushed chilis to taste) .
  • Sauce .
  • 3 c tomato juice (or tomato sauce or pureed tomatoes) .
  • 1 tsp cumin .
  • 1 dash pepper .
  • 1 1/4 c lentils .
  • 1 tbsp sugar .
  • 3/4 c tomato paste .
  • 3 c boiling water (or stock)

Directions
  • Step #1 In a large heavy saucepan over med-heat/flame, brown lentils in 2 Tbsp oil, about 5 mins, stirring often.
  • Step #2 Add the 3 c boiling stock & the salt & pepper.
  • Step #3 Cook uncovered 10 mins over med-heat/flame.
  • Step #4 Stir in the rice & 1 c stock.
  • Step #5 Bring to boil, reduce heat, cover & let simmer 25 mins without stirring.
  • Step #6 Meanwhile make sauce: Heat all the sauce ingredients together in a medium saucepan.
  • Step #7 Bring to boil, reduce heat, cover & let simmer 20-30 mins.
  • Step #8 To make browned onions, heat oil in a small skillet.
  • Step #9 Saute onions & garlic over med-heat/flame till browned.
  • Step #10 To serve, put rice lentil mixture on a platter, pour tomato sauce over & top this with browned onions.
