Green Kale Soup Recipe

Ingredients
  • 1/8 tsp ground ginger .
  • 2 c water .
  • 2 hard-boiled eggs, sliced .
  • 1 pinch white pepper .
  • 1 tsp salt .
  • 2 tbsps flour .
  • 2 tbsps sliced fresh chives .
  • 1/2 c cream (can be light) .
  • 2 c chicken broth .
  • 1 lb fresh kale (or spinach, sorrel, chard, or mixed greens) .
  • 6 green onions

Directions
  • Step #1 Combine the greens, onions & water In a large-ish soup pot.
  • Step #2 Bring to boil & cook 10 mins.
  • Step #3 Strain the liquid & set aside.
  • Step #4 Transfer the vegetables to a food processor/blender or mixer.
  • Step #5 Process until the leaves are sliced, but not pureed, as needed, adding flour & some of the strained liquid, to keep the mixture fluid.
  • Step #6 Return the mixture to the pot, along with the rest of the strained liquid.
  • Step #7 Add chicken broth.
  • Step #8 Heat to boiling & whisk in salt, ginger & pepper.
  • Step #9 Stir in the cream.
  • Step #10 Garnish with sliced hard boiled egg & chives.
  • Step #11 Serve hot.
