Gordon's Restaraunt Artichoke Fritters Recipe

Ingredients
  • 1 tsp baking powder .
  • 3 c corn oil or peanut oil .
  • 1 c all-purpose flour .
  • 1 tsp olive oil .
  • freshy ground black pepper .
  • 1 egg .
  • 1 c milk .
  • salt .
  • 10 frozen artichoke hearts, thawed, drained, halved lengthwise, & patted dry .
  • 1 c bearnaise sauce

Directions
  • Step #1 Combine the flour, baking powder, & salt & pepper in a mixing bowl.
  • Step #2 Mix well.
  • Step #3 In another bowl, mix the milk, egg, & olive oil.
  • Step #4 Whisk it into the dry ingredients until well incorporated; do not overmix.
  • Step #5 Set the batter aside for 30 mins.
  • Step #6 Heat the corn or peanut oil to 375*F.
  • Step #7 in a deep heavy skillet.
  • Step #8 Using tongs, dip the artichoke hearts in the batter & then carefully drop them in the hot oil.
  • Step #9 Fry a few at a time until golden brown, just a few seconds.
  • Step #10 Drain on paper towels, repeat with the remaining artichokes.
  • Step #11 Serve hot, with the bearnaise sauce.
  • Step #12 Note: If you don't have a deep fat thermometer, drip a 1" cube of bread in the oil.
  • Step #13 If it turns golden brown within 1 min, the oil is hot enough.
  • Step #14 Remove the bread & proceed with the recipe.
