Freezer Salsa Recipe

Ingredients
  • 1/3 c sweet red peppers or green peppers, finely sliced .
  • 12 plum tomatoes, peeled, seeded & sliced (about 6 c) .
  • 1-2 jalapeno pepper, seeded & finely sliced* .
  • 1 1/2 tsps salt .
  • 1 tbsp honey .
  • 1 tsp dried basil .
  • 1/3 c lime juice .
  • 1 tbsp sugar .
  • 1/2 c finely sliced celery .
  • 3 garlic cloves, minced .
  • 3 (6 oz) cans tomato paste .
  • 3/4 c sliced onions .
  • 1/3 c white vinegar .
  • 1/4 c olive oil

Directions
  • Step #1 In a large saucepan, celery, sauté the onion, peppers & garlic in oil for 5 mins or until tender.
  • Step #2 Stir in the remaining ingredients; bring to a boil.
  • Step #3 Reduce heat; cover & let simmer for 20 mins, stirring every once in awhile.
  • Step #4 Cool completely.
  • Step #5 Spoon into freezer containers.
  • Step #6 Cover up & freeze for up to 3 months.
  • Step #7 Stir before serving.
  • Step #8 Yield: about 6 c.
  • Step #9 *NOTE: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands.
  • Step #10 Avoid touching your face.
