Karen's Cajun Chicken Recipe

Ingredients
  • 1 chicken (cut up) .
  • 1 tsp worcestershire sauce .
  • 1/2 green pepper (sliced) .
  • file powder .
  • 1 dash cayenne pepper .
  • 3 tbsps bacon grease .
  • 1 onion (sliced) .
  • salt .
  • 1 1/2 c water .
  • 2 scallions (sliced) .
  • 1/8 tsp thyme .
  • 1 tbsp parsley .
  • 1 dash Tabasco sauce .
  • 2 tbsps flour .
  • pepper

Directions
  • Step #1 Saute chicken in bacon grease until golden brown & remove this from skillet.
  • Step #2 Make a roux by mixing flour into bacon drippings & stiring constantly until dark brown.
  • Step #3 Add green pepper,onion,and scallions to skillet.
  • Step #4 Spice up with salt,pepper,and worcestershire sauce.
  • Step #5 Add water,Tabasco sauce,cayenne pepper & thyme.
  • Step #6 Put chicken back into skillet.
  • Step #7 Cover up & let simmer until chicken is tender, about 20 mins.
  • Step #8 Lightly sprinkle file powder on top.
  • Step #9 Serve with saffron rice.
