Crock Pot Pulled Pork Tacos And Then Some Recipe

Ingredients
  • 1/2 c fresh cilantro leaves, may be sliced .
  • 1 tbsp salt .
  • 1/2 c onions, sliced (optional) .
  • 1/2 c cider vinegar .
  • mild green taco sauce, to taste .
  • FOR THE PORK (use 3 c of the finished pork roast) .
  • 8 (6 inch) corn tortillas .
  • 2 1/2-4 lbs boneless pork shoulder .
  • FOR THE TACOS .
  • 1/2 c sour cream .
  • 2 tbsps cajun seasoning .
  • 1 tbsp brown sugar .
  • 1/2 c frozen apple juice concentrate .
  • 1 tbsp cumin .
  • 1 tbsp fresh ground black pepper .
  • 2 avocados, cut into 1/4 slices .
  • 1 tbsp chili powder .
  • 1 tbsp paprika .
  • 1/2 c cheddar cheese, shredded (optional) .
  • 1 c vegetable oil, enough to cover tortillas in a small fry pan .
  • 1/2 tbsp mesquite powder

Directions
  • Step #1 Making the pork: COMBINE BROWN SUGAR THROUGH MESQUITE POWDER.
  • Step #2 Spread over entire roast.
  • Step #3 Refrigerate roast in a Ziploc bag for up to 24 hrs.
  • Step #4 PLACE APPLE JUICE & VINEGAR in a crock pot & add the spiced shoulder being careful not to lose the rub.
  • Step #5 Cook on high for two hrs, then reduce to low for 10 more hrs.
  • Step #6 REMOVE THE ROAST & let rest for 30 mins.
  • Step #7 PULL roast apart with two forks.
  • Step #8 Making the tacos: HEAT OIL in small fry pan on medium-high until hot.
  • Step #9 Fry tortillas for about 30 seconds on each side so they're starting to turn crispy but are still quite pliable.
  • Step #10 Drain on paper towels or paper bag.
  • Step #11 SPREAD SOUR CREAM down the center of each tortilla along with slices of avocado & some cilantro.
  • Step #12 DIVIDE THE PORK equally & top each taco with a portion.
  • Step #13 Finish with mild green taco sauce to taste & the optional onions and/or cheese.
