Savory Scrambled Eggs Recipe

Ingredients
  • fresh ground pepper .
  • 2 tbsps water .
  • 1/4 c light sour cream .
  • 8 large eggs .
  • 1 medium tomato, seeded, sliced, & drained .
  • 1/8 tsp salt (or to taste) .
  • 6 green onions, sliced (include some of the green part) .
  • 1 tbsp sliced fresh basil or 1/2 tsp dried basil .
  • 1 tbsp butter or margarine

Directions
  • Step #1 In a mixing bowl, basil, whisk the eggs, salt, water, & pepper together.
  • Step #2 Fold in tomato & green onion.
  • Step #3 Melt the butter In a large-ish nonstick skillet over med-heat/flame; swirl to coat bottom of pan.
  • Step #4 When butter foams, add egg mixture all at once.
  • Step #5 Let set for 20 seconds.
  • Step #6 Cook, stirring, for 3-4 mins or until light, fluffy, & almost dry.
  • Step #7 Add sour cream & stir until mixed.
  • Step #8 Serve right away.
