Light-as-a-feather Passover Matzoh Balls! Recipe

Ingredients
  • 1 c club soda .
  • black pepper (to taste or use white salt) .
  • pepper .
  • 2-4 tsps dried parsley .
  • 2 1/2 c matzo meal (you might have to add in more if the mixture is too thin, check the mixture after 1 hr of chilling) .
  • 8 large eggs .
  • seasoning salt (to taste or use white salt) .
  • 1/4 c oil (not olive oil) .
  • 1/8 tsp onion powder (or to taste, you can use onion salt in place of onion powder, just cut down on the regular salt)

Directions
  • Step #1 In a medium-size bowl, whisk eggs with a small whisk or fork.
  • Step #2 Add in the oil, seltzer, matzoh meal, pepper, onion powder, salt, parsley & baking powder (if using); mix well.
  • Step #3 Cover up & put in the fridge for 3 or more hrs (can leave in the fridge for up to 24 hrs) check the batter after 1 hr if it is too thin & not the texture to shape into a ball then add in a bit more matzoh meal, stir & then place back in to the fridge, add just enough matzoh meal to be able to shape into balls.
  • Step #4 Dip hands in cold water & shape the mixture into balls (about 2-3 tbsps for each ball).
  • Step #5 With a slotted spoon, drop the balls into a large pot of boiling water; reduce heat & let simmer COVERED for 25-30 mins or until firm but soft.
  • Step #6 *NOTE* the balls will expand quite a bit when cooking.
