Ingredients
1 medium yellow onion, sliced .
1 (10 oz) can rotel, sliced .
2 (10 1/2 oz) cans low-fat cream of mushroom soup .
1 bunch green onions, sliced .
1 bell pepper, any color .
1 lb shrimp, raw, cleaned & deveined .
2 tbsps butter
Directions
Step #1 In a large pot saute yellow onion, green onion & bell pepper in butter until softened.
Step #2 Note: You can use any color pepper.
Step #3 I use half of a red & half of a yellow pepper to add color.
Step #4 Add soup & rotel & stir this to mix.
Step #5 Turn to simmer & stir occassionally.
Step #6 It can just hang out on the stove on low until you are ready or you can proceed with the next step.
Step #7 About 5 mins before you are ready to eat add the shrimp & stir in the to mix.
Step #8 If using crawfish add about 2 mins before serving as they are already cooked.
