Ingredients
3 1/2 c unsifted flour .
3/4 tsp salt .
1/2 c butter, melted .
1 c almonds, toasted, sliced (or any other nuts) .
1 1/2 c sugar .
1/4 tsp baking soda .
1/2 tsp anise extract (or use instead ( 2 tsp anise seed, dash of lemon & orange zest, 2 tsp. vanilla & 1 tsp. almond) .
3 large eggs
Directions
Step #1 Preheat oven to 350°.
Step #2 Grease baking sheet & set aside.
Step #3 In medium bowl, mix flour, baking soda, salt & nuts; set aside.
Step #4 In large bowl beat at medium speed eggs, sugar, butter & flavorings for 4 to 5 mins or until well mixed.
Step #5 With a wooden spoon slowly stir in the the flour mixture until mixture forms a stiff dough.
Step #6 Divide dough in half and, shape each piece into a log, with flour, pressing them into 12 to 15" x 3-1/2" rolls.
Step #7 Place both rolls in the same prepared sheet.
Step #8 Bake until firm & lightly brown, approximately 25 to 30 mins.
Step #9 With a long spatula, adn using a serrated knife, transfer rolls to cutting board, cut each crosswise & diagonally into 3/4" slices.
Step #10 Place slices, cut side down on baking sheet.
Step #11 Bake 10 to 15 mins turning once again until firm & crisp on both sides.
Step #12 Cool on wire rack.
Step #13 Depending on how wide you place the dough on the baking sheet, it make approximately 40.
