Chicken Corn Chowder Recipe

Ingredients
  • 1 onion, sliced
  • 2 cubes chicken bouillon, crumbled
  • 1 1/2 c frozen corn kernels
  • 1 chicken carcass
  • 1 bay leaf
  • 2 tbsps butter
  • 2 potatoes, peeled & sliced
  • salt & pepper to taste
  • 2 tbsps dried parsley
  • 2 tbsps heavy cream
  • 3 shallots, sliced

Directions
  • Step #1 Place chicken carcass (and any leftover skin & meat & other bones) in a large pot & cover with cold water.
  • Step #2 Add bay leaf, & bring to a boil.
  • Step #3 Reduce heat, & let simmer 60 to 90 mins.
  • Step #4 Remove from heat, cool slightly, & strain.
  • Step #5 Remove chicken meat from carcass, & chop into bite-size pieces.
  • Step #6 In a large saucepan over med-heat/flame, melt butter.
  • Step #7 Cook onion & shallots in butter until translucent.
  • Step #8 Pour in strained broth & chicken meat & stir in the bouillon, pepper, parsley, salt, potatoes & corn.
  • Step #9 Simmer 15 mins, until potatoes are cooked & corn is tender.
  • Step #10 Remove from heat & stir in the cream.
