Creamy Zucchini Soup Recipe

Ingredients
  • 2 tbsps olive oil
  • 1 1/2 lbs zucchini, sliced
  • 1 tsp dried oregano
  • 1 onion, sliced
  • 1/2 (14 oz) package firm tofu, cubed
  • 1 tbsp butter
  • salt & pepper to taste
  • 2 tsps red pepper flakes
  • 1/2 c cottage cheese
  • 3 c vegetable stock

Directions
  • Step #1 Melt the butter & heat the oil in a large skillet over med-heat/flame.
  • Step #2 Mix in the onion, & cook 5 mins.
  • Step #3 Mix in the zucchini & tofu.
  • Step #4 Spice up with red pepper flakes & oregano.
  • Step #5 Continue to cook & stir 10 mins, until zucchini is tender.
  • Step #6 Pour the vegetable stock into the skillet.
  • Step #7 Bring to a boil, reduce heat to low, & let simmer 35 mins.
  • Step #8 In a mixer, process the soup & cottage cheese until smooth.
  • Step #9 Spice up with salt & pepper to serve.
