Yellow Rice With Pigeon Peas A Al Mariah Carey Recipe

Ingredients
  • 1 tbsp turmeric .
  • 1 tbsp chicken base or vegetable stock base, dark roasted .
  • 1/2 c butter .
  • 1 tsp fresh ground pepper (melange) .
  • sea salt (optional) .
  • 6 c water .
  • 2 sweet onions, sliced .
  • 3 c white rice or brown rice .
  • 1 tsp garlic powder, sliced fine or 2 garlic cloves, sliced fine .
  • 1 tsp onions .
  • 14 1/2 oz pigeon peas

Directions
  • Step #1 Note if using brown, soak it a bit first & NO it should NOT be crunchy when done.
  • Step #2 Melt butter in saucepan.
  • Step #3 Add onion & saute until translucent.
  • Step #4 Add the rice & tumeric & lightly saute until coated.
  • Step #5 Add water, salt, base, peas & seasonings.
  • Step #6 Cover up & let simmer until water is absorbed.
  • Step #7 If any water is left, turn off heat & let rest, keeping covered because the rice will continue to cook without burning.
  • Step #8 Note, check your directions for brown.
  • Step #9 The above was from the original recipe for white.
