Curried Chicken Salad With Garam Masala Biscuits Recipe

Ingredients
  • 1 c mayonnaise, plus more for spreading .
  • 2 tsps baking powder .
  • 3/4 c buttermilk, plus more for brushing .
  • 1 tbsp fresh lime juice .
  • 6 tbsps cold unsalted butter, cut into 1/2-inch pieces .
  • 2 celery ribs, preferably from the heart, finely sliced .
  • 1 tsp salt .
  • Chicken Salad .
  • 1 onion, coarsely sliced .
  • 1 carrot, coarsely sliced .
  • 1/4 c shelled pistachios, toasted (see Note) .
  • 3 tbsps sugar .
  • 1 tbsp curry powder .
  • 1 bay leaf .
  • 2 c all-purpose flour, plus more for rolling .
  • 4 lbs chicken breast halves, on the bone, with skin .
  • salt & freshly ground black pepper .
  • 1/2 tsp baking soda .
  • 2 tbsps sliced cilantro .
  • 3 c red grapes, halved (about 14 oz) .
  • 1 tsp black peppercorns .
  • 1 1/2 tbsps garam masala .
  • Garam Masala Biscuits

Directions
  • Step #1 Preheat the oven to 375°.
  • Step #2 In a medium bowl, whisk the 2 c of flour with the sugar, garam masala, baking powder, salt & baking soda.
  • Step #3 Using a pastry mixer or 2 knives, cut in the butter until it is the size of small peas.
  • Step #4 Add the ‚ c of buttermilk & stir until a dough forms.
  • Step #5 Turn the dough out onto a lightly floured surface & knead it 2 or 3 times.
  • Step #6 Roll or pat the dough into a 6-by-12-inch rectangle, about ‚-inch thick.
  • Step #7 Using a floured knife, cut the dough into 8 square biscuits.
  • Step #8 Brush the tops with buttermilk & transfer the biscuits to a baking sheet.
  • Step #9 Bake for about 18 mins, until risen & golden.
  • Step #10 Transfer to a wire rack to cool.
  • Step #11 Chicken.
  • Step #12 Fill a large pot with 3 quarts of water.
  • Step #13 Add the carrot, onion, peppercorns & bay leaf & bring to a simmer.
  • Step #14 Add the chicken & let simmer over moderate heat until cooked through, about 30 mins.
  • Step #15 Transfer the chicken to a plate & put in the fridge until cool enough to handle.
  • Step #16 Reserve the broth for another use.
  • Step #17 Discard all of the chicken skin.
  • Step #18 Remove the meat from the bones & cut it into 1/2-inch pieces.
  • Step #19 In a medium bowl, mix the 1 c of mayonnaise with the curry powder & lime juice.
  • Step #20 Stir in the chicken pieces, grapes, celery, cilantro & pistachios & season this with salt & pepper.
  • Step #21 Serve the chicken salad with the Garam Masala Biscuits on the side.
  • Step #22 Alternatively, split the biscuits in half & spread them lightly with mayonnaise.
  • Step #23 Mound the chicken salad on the bottom halves & close the sandwiches.
  • Step #24 Serve right away.
