Step #1 In a small mixer bowl at lowish speed, minced onion, thyme, salt, coriander, egg, 1/4 c flour, beat pork, sage, & 1/8 tsp pepper just until mixed.
Step #2 Slowly add 1/2 c water & beat until mixture is smooth & light.
Step #3 In a large skillet over medium-low heat, heat 2 tbsps of the margarine until foam subsides.
Step #4 Drop about 1/4 c of the pork mixture at a time into skillet & shape into patties about 1/2 -inch thick.
Step #5 Sauté 7 mins or until a rich medium-brown crust forms.
Step #6 Turn patties & cook 7 mins longer or until no longer pink in the center.
Step #7 Drain on paper towels & keep warm.
Step #8 In a medium saucepan over med-heat/flame, sauté sliced onion in 1 tbsp of the margarine 3 mins.
Step #9 Add mushrooms & sauté 2 mins longer.
Step #10 Remove to a small bowl; set aside.
Step #11 In the same saucepan over med-heat/flame, melt remaining 2 tbsps margarine.
Step #12 Add 2 tbsps flour.
Step #13 Cook & stir 1 min or until lightly browned.
Step #14 Stir in 1 1/2 c water, bouillon granules, & 1/8 tsp pepper.
Step #15 Stirring, bring to a boil & boil 3 mins or until thickened.
Step #16 Remove from heat.
Step #17 Return onion & mushrooms.
Step #18 Stir in sour cream until mixed.
Step #19 Cook over low heat/flame just until heated through (do not boil).
Step #20 Serve with potatoes.
Step #21 Pass gravy separately.
