Spinatsuppe (norwegian Spinach Soup) Recipe

Ingredients
  • 1/8 tsp nutmeg .
  • 1 tsp salt .
  • 3 tbsps butter .
  • 1/4 tsp pepper .
  • 8 c chicken broth .
  • 2 lbs fresh spinach (or 1 lb frozen, sliced spinach) .
  • 2 hardboiled egg, sliced .
  • 2 tbsps flour

Directions
  • Step #1 Wash spinach thoroughly; drain & chop coarsely.
  • Step #2 (If you're using frozen spinach, defrost it & drain thoroughly.
  • Step #3 ).
  • Step #4 Place a sieve or strainer over a large bowl; set aside.
  • Step #5 In a large saucepan or soup pot, bring broth to a boil.
  • Step #6 Add spinach.
  • Step #7 Simmer 5 mins, then pour this into sieve or strainer, catching the stock in the bowl.
  • Step #8 Press the spinach with a spoon to remove as much liquid as possible.
  • Step #9 Set the stock aside.
  • Step #10 Chop the spinach very fine.
  • Step #11 (this step not necessary if using frozen spinach).
  • Step #12 Melt the butter in the saucepan or soup pot.
  • Step #13 Remove pan from heat & stir in the the flour.
  • Step #14 Using a whisk, slowly add the hot broth, mixing well.
  • Step #15 Return pan to heat & bring broth to a boil, stirring constantly.
  • Step #16 Add spinach, pepper, salt, & nutmeg.
  • Step #17 Cover up pan, & let simmer 5 mins, reduce heat, stirring every once in awhile.
  • Step #18 Serve soup garnished with slices of hard-boiled egg.
