South Beach Meatloaf Recipe

Ingredients
  • 1/4 c liquid egg substitute .
  • 1 c oatmeal .
  • 1 garlic clove, minced .
  • 1/2 c dry red wine .
  • 1/2 c water .
  • 1 (6 oz) can no-salt added tomato paste .
  • 1/2 c zucchini, shredded .
  • 16 oz ground turkey breast .
  • 1/4 tsp dried oregano .
  • 1/2 tsp dried basil .
  • 1/4 tsp salt

Directions
  • Step #1 Preheat the oven to 350.
  • Step #2 Combine the tomato paste, oregano, wine, basil, garlic, water, & salt in a small saucepan.
  • Step #3 Bring to a boil, then reduce the heat to low.
  • Step #4 Simmer, uncovered for 15 min Set aside.
  • Step #5 Combine the turkey, zucchini, oatmeal, egg substitute, & 1/2 c of the tomato mixture ina large bowl.
  • Step #6 Mix well.
  • Step #7 Shape into a loaf & place this into an ungreased 8"x4" loaf pan.
  • Step #8 Bake for 45 min Discard any drippings.
  • Step #9 Pour 1/2 c of the remaining tomato mixture on top of the loaf.
  • Step #10 Bake for an extra 15 min.
  • Step #11 Place on a serving platter.
  • Step #12 Cool for 10 min before slicing.
  • Step #13 Serve the remaining tomato sauce on the side.
