Sesame-crusted, Pan-seared Cod With Asian Vinaigrette Recipe

Ingredients
  • 2 tbsps canola oil, divided .
  • 12 pieces cod, 2 inch squares .
  • 1 tbsp rice wine vinegar .
  • 2 garlic cloves, minced .
  • 1 green onion, minced .
  • 1 tbsp toasted sesame oil .
  • 2 tbsps cilantro leaves, minced .
  • salt & pepper .
  • 1/2 c sesame seeds .
  • 1 tbsp soy sauce .
  • 1 tbsp ginger, grated

Directions
  • Step #1 In a small bowl add ginger, rice wine vinegar, green onion, sesame oil, garlic, soy, cilantro, 1 tbsp of canola oil.
  • Step #2 Whisk ingredients together.
  • Step #3 Spice up Cod with salt & pepper.
  • Step #4 Place sesame seeds on a plate.
  • Step #5 Pat down top & bottom side of each cod in sesame seeds.
  • Step #6 In a saute pan, over medium-high heat add in the remaining tbsp oil.
  • Step #7 When oil is hot, add cod placing them sesame-crusted side down.
  • Step #8 Sear for approximately 1 min, or until sesame seeds brown.
  • Step #9 Turn & sear on other sesame-crusted side for 1 more min.
  • Step #10 Spoon vinaigrette on serving plate & place cod on top.
