1/4 c feta cheese, crumbled (I used Greek herbed) .
175 g plain yogurt (a little over half a c) .
1/2 tsp cracked pepper .
2 medium tomatoes, sliced .
5-6 kalamata olives, pits removed & rough sliced, more if you wish .
1/2 lb fresh green beans .
1/4 c parmesan cheese, shredded
Directions
Step #1 Steam the green beans for about 5 mins or until tender crisp.
Step #2 I like to leave them whole but they can be used cut in one inch lengths; set aside.
Step #3 In a small bowl mix together yogurt, feta cheese, parmesan cheese & pepper.
Step #4 Taste & adjust seasoning; do not salt, the cheese & olives are quite salty; set aside.
Step #5 In a small casserole or au gratin dish, starting with green beans, layer green beans & tomato slices, as you go cover each tomato layer with a thin coat of the yogurt mixture.
Step #6 Finish the layers with the yogurt mixture.
Step #7 Scatter the sliced olives over all.
Step #8 The dish can be served cold as a salad at this point or if you prefer a hot side dish bake in 400f degree oven for approximately 20 mins until heated through, either way it is delicious.
