Ingredients
1/2 tsp ground nutmeg .
1 pinch fresh ground white pepper .
1/4 c whole milk .
1 c whole wheat flour .
2 eggs .
2 tbsps sliced fresh chives or green onions .
2 tbsps butter .
1/2 tsp salt
Directions
Step #1 1.
Step #2 Mix together flour, salt, white pepper, & nutmeg.
Step #3 Beat eggs well, & add alternately with the milk to the dry ingredients.
Step #4 Mix until smooth.
Step #5 2.
Step #6 Press dough through spaetzle maker, or a large holed sieve or metal grater.
Step #7 3.
Step #8 Drop a few at a time into simmering liquid.
Step #9 Cook 5 to 8 mins.
Step #10 When Spaetzle come to the top they are done.
Step #11 Remove with a slotted spoon.
Step #12 It is best to cook a small amount at a time.
Step #13 4.
Step #14 Saute cooked spaetzle in butter or margarine.
Step #15 Sprinkle top sliced fresh chives on top, & serve.
