German Spaetzle Dumplings Recipe

Ingredients
  • 1/2 tsp ground nutmeg .
  • 1 pinch fresh ground white pepper .
  • 1/4 c whole milk .
  • 1 c whole wheat flour .
  • 2 eggs .
  • 2 tbsps sliced fresh chives or green onions .
  • 2 tbsps butter .
  • 1/2 tsp salt

Directions
  • Step #1 1.
  • Step #2 Mix together flour, salt, white pepper, & nutmeg.
  • Step #3 Beat eggs well, & add alternately with the milk to the dry ingredients.
  • Step #4 Mix until smooth.
  • Step #5 2.
  • Step #6 Press dough through spaetzle maker, or a large holed sieve or metal grater.
  • Step #7 3.
  • Step #8 Drop a few at a time into simmering liquid.
  • Step #9 Cook 5 to 8 mins.
  • Step #10 When Spaetzle come to the top they are done.
  • Step #11 Remove with a slotted spoon.
  • Step #12 It is best to cook a small amount at a time.
  • Step #13 4.
  • Step #14 Saute cooked spaetzle in butter or margarine.
  • Step #15 Sprinkle top sliced fresh chives on top, & serve.
