Cream Of Tomato Soup Recipe

Ingredients
  • fresh garlic (optional) .
  • 1 large onion, sliced .
  • 1 (10 oz) can chicken broth .
  • grated parmesan cheese (optional) .
  • 1/4 c butter .
  • 1/2-1 tsp dried dill .
  • 2 (19 oz) cans tomatoes, slightly drained .
  • salt .
  • 3 stalks celery, sliced .
  • 2 c half-and-half cream (or use 4 c half & half cream) .
  • pepper .
  • 1/2 c spicy clamato juice (try to use only the spicy flavor) .
  • 1 c Cheese Whiz .
  • 1/2 c flour .
  • 2 c milk

Directions
  • Step #1 In a large pot simmer the tomatoes, broth, celery, onion, Clamato juice & dill until veggies are tender (about 20 mins).
  • Step #2 Puree in a mixer to a smooth consistancy.
  • Step #3 In a Dutch oven or medium-size pot, melt butter, then whisk in flour to make a paste.
  • Step #4 Add in pepper to taste.
  • Step #5 Add in milk & half & half cream slowly; whisk to make a thick white paste.
  • Step #6 Stir in the tomato soup mixture & Cheese Whiz; stir until thick & hot.
  • Step #7 Spice up with salt & more pepper if desired to taste.
  • Step #8 Ladle into serving bowls.
  • Step #9 Sprinkle top with grated Parmesan cheese if desired.
