Irish Style Potato-chive Pancakes Recipe

Ingredients
  • 1/4 tsp fresh ground black pepper .
  • 1/2 c sour cream .
  • 3 tsps butter .
  • 1 c milk .
  • 1/3 c sliced chives .
  • 2 lbs potatoes, cut into 1-inch chunks .
  • 3/4 tsp salt

Directions
  • Step #1 Place potatoes in large saucepan; cover with cold water.
  • Step #2 Bring to a boil over high heat.
  • Step #3 Reduce heat; simmer uncovered until potatoes are tender, 15 to 20 mins.
  • Step #4 Drain potatoes, then return to saucepan.
  • Step #5 Turn heat under saucepan to medium-low.
  • Step #6 Cook potatoes until dry, about 2 mins, stirring every once in awhile.
  • Step #7 Add milk.
  • Step #8 Using a potato masher, mash potato mixture until fairly smooth.
  • Step #9 Remove from heat; stir in the chives, salt & pepper.
  • Step #10 Transfer to a medium bowl, cover & put in the fridge until cold.
  • Step #11 Potatoes will thicken as they cool.
  • Step #12 Form potato mixture into 12 patties about 3 1/2 inches in diameter & 1/2 inch thick.
  • Step #13 Melt 1 tsp butter In a large-ish nonstick skillet over med-heat/flame until hot & sizzling.
  • Step #14 Add three or four patties to skillet.
  • Step #15 Cook until golden brown, about 2 mins per side.
  • Step #16 Keep warm in a 200 degrees F oven while cooking remaining patties in remaining butter.
  • Step #17 Serve warm with sour cream.
