North African Vegetable Soup Recipe

Ingredients
  • 1 tsp ground coriander .
  • 4 small tomatoes, sliced .
  • 2 celery ribs, sliced .
  • fresh parsley, sliced .
  • red bell peppers or pimiento strips .
  • 1 c tomato juice .
  • 1 small potato, sliced .
  • 4 c vegetable stock .
  • 1 tsp turmeric .
  • fresh mint leaves .
  • 1 c onions, finely sliced .
  • 1 small carrot, sliced .
  • 1/2 c curly vermicelli, crumbled .
  • 1 small zucchini, finely sliced .
  • salt & pepper .
  • 1/4 c fresh lemon juice .
  • 1 c chickpeas (canned or cooked) .
  • Garnish .
  • 1/2 tsp cinnamon .
  • 3 tbsps vegetable oil .
  • 1/8 tsp cayenne

Directions
  • Step #1 In a soup pot, saute the onions & celery in the oil until onions are translucent.
  • Step #2 Add the spices, potatoes, & carrots & cook for 5 more mins, stirring often.
  • Step #3 Mix in the tomatoes, tomato juice & stock & let simmer until all of the vegetables are almost tender.
  • Step #4 Add the zucchini & vermicelli & let simmer for about 5 mins longer.
  • Step #5 Mix in the chick peas, lemon juice, & salt & pepper.
  • Step #6 Garnish with sliced parsley, mint leaves, & strips of red bell pepper or pimiento.
