Fig And Walnut Pie Recipe

Ingredients
  • 1/4 c firmly packed light brown sugar .
  • 1 1/2 c dried figs, stemmed & quartered .
  • 1 1/2 c walnuts, coarsely sliced .
  • 1/2 tsp ground cinnamon .
  • 1/4 c heavy cream .
  • 1 (9 inch) prepared graham cracker crusts .
  • 6 tbsps light corn syrup .
  • 1/2 c unsalted butter

Directions
  • Step #1 Combine the butter, & corn syrup in a saucepan; bring to a boil, brown sugar, stirring frequently.
  • Step #2 Boil for 1 min.
  • Step #3 Stir in the figs, walnuts, heavy cream, & cinnamon; bring back to a boil.
  • Step #4 Lower the heat to medium & let simmer mixture for 5 mins, stirring every once in awhile.
  • Step #5 Transfer the filling into the prepared pie crust; let the filling cool to about room temp.
  • Step #6 Cover up the pie with plastic wrap & put in the fridge until the filling is completely set (at least 3 hrs & up to 3 days).
