Blueberry Yogurt Pound Cake Recipe

Ingredients
  • 1 tbsp grated orange rind .
  • 2 c blueberries .
  • 1 1/2 tsps baking soda .
  • 3/4 c orange juice .
  • 1/2 tsp salt .
  • 1 c butter .
  • icing sugar .
  • 3 c all-purpose flour .
  • 3 eggs .
  • 1 1/3 c sugar .
  • 1 c yogurt

Directions
  • Step #1 Preheat oven to 350°F In large bowl, cream butter until fluffy.
  • Step #2 Beat in sugar until mixture is light & fluffy, 5 to 8 mins.
  • Step #3 Beat in eggs one at a time.
  • Step #4 Stir or sift together flour, baking soda & salt; mix in berries.
  • Step #5 In separate bowl, stir this together yogurt, orange juice & rind.
  • Step #6 Mix 1/3 of the dry ingredients into batter; add half of the yogurt mixture.
  • Step #7 Stir in another third of the dry ingredients, then remaining yogurt mixture & dry ingredients.
  • Step #8 Pour into well-greased & floured deep 9 or 10 inch tube or bundt pan; smooth top & tap pan lightly on work surface to remove air bubbles.
  • Step #9 Bake for 60 to 70 mins or until tester inserted in centre comes out clean & cake is well-risen.
  • Step #10 Let cool for 15 mins.
  • Step #11 Dust with icing sugar.
