Easy Artichoke-tomato Quiche Casserole Recipe

Ingredients
  • 1 small tomato, sliced .
  • 1 c mozzarella cheese, divided .
  • 2 tsps parmesan cheese .
  • 1 dash paprika (optional) .
  • 4 eggs (or 1 c egg beaters) .
  • 12 oz evaporated milk (plus enough water to equal 1 1/2 c) .
  • 1/2 c parmesan cheese, grated .
  • 1/2 c Bisquick baking mix .
  • 1 c marinated artichoke hearts, drained (broken into bite-size pieces & reserve liquid) .
  • 1/4 tsp minced garlic cloves

Directions
  • Step #1 1.
  • Step #2 Preheat oven to 350 degrees & lightly grease a 2 quart casserole.
  • Step #3 2.
  • Step #4 Saute artichokes, garlic & pakrika in liquid on low heat for about 5 mins.
  • Step #5 3.
  • Step #6 Drain & pour this into casserole, cover with 1/2 c mozzerella & 2 tsp parmesan.
  • Step #7 4.
  • Step #8 Mix next 4 ingredients til just mixed.
  • Step #9 Pour over casserole.
  • Step #10 5.
  • Step #11 Arrange sliced tomatoes overBisquick mixture.
  • Step #12 cover with remaining mozzerella.
  • Step #13 6.
  • Step #14 Bake for 50-60 mins.
